Paolo Bea’s passionate approach to organic and non-interventionist winemaking have made him a legend in Umbria amongst Italian winemakers. Relying on simple traditions like hand-picking the grapes, and bottling without any fining or filtration reflect his naturalist philosophy on wine and how it should taste like the place that it’s from. Bea’s wines go beyond standard organic winemaking in that he truly doesn’t add or remove anything from the wine to modify the taste in any way. The grapes are harvested manually, placed in tanks or casks and left alone to do what they will. His minimalist process combined with respect for the land, grapes and all the flavors that come from a truly natural wine are the characteristics that make his wines so incredibly unique and perfect for pairing with fresh, locally grown ingredients in a fantastic wine dinner!
